MAY THE CAKE BE WITH YOU


Over the last several years, thanks to numerous cooking shows, cooking has come back in vogue, and top chefs have become superstars. One of the rising stars is Marko Josipović, who is only 16, but is already writing for several Croatian portals and has his own food blog, and when you mention him in the Zagreb pastry circles, you’ll hear: Oh, we know Marko, he truly is a talent. We spoke with Marko on a not-so-sunny Saturday because we wanted to know where this love of cake came from.

“I’ve always helped at home with cakes, and one time my mother taught me to make sponge cake using my grandma’s recipe. After that, I started to experiment, with the help of YouTube, of course, and watching shows on 24Kitchen because I still don’t have enough skills to make my own recipes. But I add a little something of my own in each one”, this high-schooler from Zagreb tells us humbly while we sit at Cup&Cake, one of his favourite pastry shops, having coffee and cake.

We wanted to know what he likes to do most and who has the gruelling responsibility of trying all of his cakes. “I prefer to make cakes the most, but it takes up a lot of my time. The cake I did for my birthday looked like layered pancakes with chocolate filling, and it took me 5-6 hours to make, which is a lot if it’s a school night. I also love to bake cupcakes because they’re simple and look good on photos”, he says.

Marko has an Instagram profile, @marko_bakes, and he has taken and arranged all the photos he posts there. “If I’m looking for inspiration for my recipes, I first consult with Martha Stewart; Donal Skehan is also one of my role models. I find inspiration for the photos on social networks, Pinterest and Instagram”, says Marko, whom they now call marko_bakes at his school (Tenth General Program High School Ivan Supek) as well. His family and friends eat his cakes, and he often treats them for their birthdays. When he’s not baking, Marko is doing schoolwork, taking drama classes at ZKM or hanging out with his friends, just like any other teenager. He wishes to keep learning and one day he might even enrol one of the famous world culinary academies, who knows. We wish for his wish to come true 😀
